Baked Brie with Pastry (Print version)

Creamy Brie wrapped in golden puff pastry with fruit preserves and nuts for a savory, warm appetizer.

# What you'll need:

→ Cheese & Pastry

01 - 1 wheel Brie cheese (7–9 oz)
02 - 1 sheet puff pastry, thawed

→ Toppings

03 - 2 tbsp fruit preserves (apricot, raspberry, or fig recommended)
04 - 2 tbsp chopped nuts (walnuts or pecans, optional)

→ Egg Wash

05 - 1 egg
06 - 1 tbsp water

# How to make it:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Place the thawed puff pastry on a lightly floured surface. Set the Brie wheel in the center.
03 - Spread fruit preserves over the top of the Brie. Sprinkle chopped nuts if desired.
04 - Fold pastry over the Brie, trimming any excess dough, and press to seal. Flip the wrapped Brie seam-side down onto the prepared baking sheet.
05 - Beat egg with water in a small bowl. Brush the pastry surface with the egg wash to ensure a golden finish.
06 - Bake for 18–22 minutes or until the pastry is golden brown and crisp.
07 - Allow to rest for 5 minutes before serving warm alongside crackers or sliced baguette.

# Expert suggestions:

01 -
  • It looks like you spent hours but takes less time than most people spend choosing a playlist.
  • The contrast between crisp pastry and warm, oozing cheese is impossible to resist.
  • You can dress it up or down depending on what's in your pantry.
02 -
  • Don't skip the resting time or the cheese will run all over your board the second you cut in.
  • If your Brie is too soft or warm when you wrap it, it'll ooze out during baking, use cold cheese straight from the fridge.
03 -
  • Use a sharp knife to score the top of the pastry lightly before baking, it looks beautiful and helps steam escape.
  • If your preserves are chunky, warm them slightly and stir until smooth so they spread easily over the cheese.
