# Expert suggestions:

01 -
  • Everything comes together in one pan meaning minimal cleanup and maximum flavor concentration
  • The beef stays incredibly tender thanks to a quick velvetting technique that transforms ordinary cuts into something special
02 -
  • Crowding the wok drops the temperature and turns stir fry into a steamed mess so work in batches if your pan is smaller than what restaurants use
  • The sauce thickens fast once it hits the hot pan so have your spoon ready and keep everything moving to prevent any sticking or clumping
03 -
  • Slice your beef when it is partially frozen against the grain for thin even pieces that cook evenly and stay tender
  • Toast extra sesame seeds in bulk and keep them in a jar because everything from roasted vegetables to salad benefits from that nutty crunch
