Creamy Low Carb Chicken Casserole (Print version)

# How to make it:

01 - Preheat oven to 400°F for baking.
02 - Heat olive oil in large skillet over medium heat. Sauté onions and garlic 2–3 minutes until fragrant.
03 - Add chicken pieces to skillet, cook 5–6 minutes until browned but not fully cooked through.
04 - Stir in mushrooms and broccoli, sauté 3–4 minutes. Remove from heat.
05 - Combine heavy cream, chicken broth, cream cheese, dried thyme, salt, and pepper in saucepan. Heat gently, stirring until smooth.
06 - Stir in mozzarella and parmesan cheese until melted and sauce thickens, 2–3 minutes.
07 - Mix chicken-vegetable mixture with creamy sauce in large bowl.
08 - Transfer mixture to greased casserole dish. Top with optional shredded mozzarella.
09 - Bake 20–25 minutes until bubbly and golden on top.
10 - Sprinkle fresh parsley over top before serving.
