Cucumber Herb Cream Cheese (Print version)

Refreshing cucumber paired with creamy herbed cheese on soft bread, perfect for light bites.

# What you'll need:

→ Herb Cream Cheese

01 - 8 oz cream cheese, softened
02 - 2 tbsp fresh chives, finely chopped
03 - 1 tbsp fresh dill, finely chopped
04 - 1 tbsp fresh parsley, finely chopped
05 - 1 tsp lemon juice
06 - 1/4 tsp garlic powder
07 - Salt and freshly ground black pepper, to taste

→ Sandwiches

08 - 1 English cucumber, thinly sliced
09 - 12 slices white sandwich bread, crusts removed
10 - 2 tbsp unsalted butter, softened (optional)

# How to make it:

01 - In a bowl, combine the cream cheese, chives, dill, parsley, lemon juice, garlic powder, salt, and pepper. Mix until smooth and well blended.
02 - Lay out the bread slices. If desired, lightly spread a thin layer of butter on each slice to prevent sogginess.
03 - Evenly spread the herb cream cheese mixture onto each slice of bread.
04 - Arrange cucumber slices over half of the bread slices, slightly overlapping.
05 - Top with the remaining bread slices, cream cheese side down, to form sandwiches.
06 - Gently press each sandwich and trim the crusts if not already removed. Cut each sandwich into quarters (rectangles or triangles) for serving.

# Expert suggestions:

01 -
  • The cream cheese spread keeps for days in the fridge, making it perfect for impromptu gatherings
  • These sandwiches disappear faster than anything else on the table, and nobody guesses how effortless they were to assemble
02 -
  • Assembling these no more than two hours before serving keeps them fresh without compromising texture, and covering them with a barely damp paper towel prevents the bread from drying out
  • The thickness of your cucumber slices matters more than you'd think aim for thin enough to bend slightly but substantial enough to provide that satisfying crunch
03 -
  • Use a mandoline or very sharp knife for uniformly thin cucumber slices, which prevents any one bite from feeling overwhelmingly vegetable forward
  • If your bread seems slightly dry, lightly mist it with water before assembling, which helps it absorb some moisture from the spread without becoming soggy
