Easy Roasted Beets (Print version)

Tender, naturally sweet beets roasted until caramelized. A simple healthy side ready in 55 minutes.

# What you'll need:

→ Vegetables

01 - 4 medium beets (about 1.1 pounds), scrubbed and trimmed

→ Oils & Seasonings

02 - 2 tablespoons olive oil
03 - 1/2 teaspoon kosher salt
04 - 1/4 teaspoon freshly ground black pepper
05 - 1 tablespoon balsamic vinegar (optional)

# How to make it:

01 - Preheat the oven to 400°F.
02 - Peel the beets using a vegetable peeler and cut them into 1-inch cubes.
03 - Place the beet cubes on a baking sheet lined with parchment paper.
04 - Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
05 - Spread the beets out in a single layer for even roasting.
06 - Roast for 40–45 minutes, stirring halfway through, until the beets are tender and caramelized at the edges.
07 - Drizzle with balsamic vinegar while still warm and toss to coat.
08 - Serve warm or at room temperature.
