08 - 1 medium tomato, seeded and diced
09 - 1/4 cup red onion, finely chopped
10 - 1/2 jalapeño, seeded and minced
11 - 1/3 cup pecans, toasted and roughly chopped
12 - 2 tablespoons fresh cilantro, chopped
13 - Juice of 1 lime
14 - 1/2 teaspoon honey
15 - 1/4 teaspoon salt

# How to make it:

01 - Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
02 - In a small bowl, combine olive oil, smoked paprika, cumin, salt, and black pepper. Rub mixture evenly over chicken breasts.
03 - Arrange chicken breasts on lined baking sheet and bake for 20–25 minutes, or until internal temperature reaches 165°F (74°C).
04 - While chicken bakes, combine peaches, tomato, red onion, jalapeño, toasted pecans, cilantro, lime juice, honey, and salt in a medium bowl. Mix gently to combine.
05 - Allow chicken to rest for 5 minutes after baking. Slice and plate, topping each portion generously with peach & pecan salsa.
