01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - Toss sweet potato fries with olive oil, smoked paprika, garlic powder, salt, and freshly ground black pepper. Spread evenly on the prepared baking sheet.
03 - Bake fries for 30 to 35 minutes, turning halfway through, until golden and crisp at the edges.
04 - While fries bake, combine ground turkey, chopped onion, minced garlic, egg, parsley, Dijon mustard, smoked paprika, salt, and black pepper in a large bowl. Mix gently until just combined.
05 - Divide mixture evenly and form into 4 patties.
06 - Heat olive oil in a large skillet over medium heat. Cook patties for 5 to 6 minutes per side, until golden brown and internal temperature reaches 165°F.
07 - Toast burger buns if desired. Assemble by placing turkey patty on each bun and topping with lettuce, tomato, red onion, and chosen condiments.
08 - Serve burgers immediately alongside crispy sweet potato fries.
