Honey Chex Chocolate Peanut Butter Bars (Print version)

Crunchy honey Chex coated in peanut butter and topped with rich chocolate.

# What you'll need:

→ Base

01 - 4 cups gluten-free Honey Chex cereal
02 - 1 cup creamy peanut butter
03 - 1/2 cup honey
04 - 1/4 cup unsalted butter

→ Chocolate Topping

05 - 1 cup semisweet chocolate chips (gluten-free certified)
06 - 2 tablespoons creamy peanut butter

# How to make it:

01 - Line an 8x8-inch baking pan with parchment paper, allowing overhang on opposite sides for easy removal of bars later.
02 - Combine peanut butter, honey, and butter in a large saucepan over medium-low heat. Stir continuously until completely melted and smooth, then remove from heat.
03 - Pour the Honey Chex cereal into the warm mixture. Gently fold until all pieces are evenly coated with the peanut butter mixture.
04 - Transfer the coated cereal to the prepared pan. Press firmly and evenly using a spatula or the back of a spoon to create a compact layer.
05 - Place chocolate chips and 2 tablespoons peanut butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely smooth and melted.
06 - Pour the melted chocolate mixture over the cereal base. Spread evenly with a spatula to cover the entire surface.
07 - Refrigerate for at least 1 hour until the chocolate is firm and the bars are completely set.
08 - Lift the bars from the pan using the parchment paper overhang. Cut into 16 equal squares and serve.

# Expert suggestions:

01 -
  • No oven means your kitchen stays cool and cleanup is practically nonexistent
  • The honey adds a floral sweetness that pairs perfectly with salty peanut butter
  • These bars come together in fifteen minutes flat but taste like you spent all afternoon
02 -
  • Press the cereal mixture firmly or the bars will crumble when you try to cut them
  • Room temperature chocolate topping will not set properly, so let it cool slightly before pouring
  • These bars need to stay refrigerated or the chocolate layer will soften and lose its snap
03 -
  • Warm your knife under hot water and wipe it dry between cuts for perfectly clean slices
  • If your chocolate seizes while melting, add a teaspoon of coconut oil to smooth it out again
